Rasmalai | Ras Malai Recipe

In this post, I will tell you how to make soft and delicious rasmalai. Rasmalai is a sweet, traditional dessert. This easy and yummy rasmalai recipe tastes best when served chilled. Rasmalai’s recipe looks great after garnishing with almonds and pistachios. Perfect for your parties and a great treat to guests!


  • 1-liter milk
  • ½ cup sugar or to taste
  • 5-7 crushed cardamom
  • Dry milk powder 1 cup
  • 1 tablespoon (tbsp.) all-purpose flour
  • Baking powder 1 teaspoon (tsp.)
  • 3 tbsp. beaten eggs
  • 1 tbsp. oil
  • 1 tbsp. chopped pistachio and almonds

  • Large Bowl
  • Measuring Spoons

Steps to make Rasmalai:

  1. Add milk, sugar and crushed cardamom in a pan, mix well and cook for 4-5 minutes on a medium flame until sugar is dissolved and set aside.
  2. In a large bowl, add one cup dry milk powder, 1 tbsp. all-purpose flour, 1 tsp. baking powder and mix well.
  3. Add oil and mix well.
  4. Gradually add eggs and knead until dough is formed. Refrigerate it for 5-7 minutes.
  5. Takes dough, makes small balls of equal size, and presses it.
  6. Heat milk and add balls as soon as you make it one by one (Don’t wait for all balls to be formed as keeping them open makes them hard).
  7. Cover and cook on low flame for 10 minutes. Do not stir or use any spoon otherwise balls will break.

  • Use milk powder only. Don’t use any tea whitener powder as balls are not going to hold shape.
  • Second, if you don’t have the baking powder you can use 1 tbsp. yogurt instead of it. Or you can also substitute it with ½ tbsp. vinegar + ¼ tbsp. of baking soda.
