Lamb Biryani |Mutton Biryani |Goat Biryani

Are you looking for an easy lamb biryani recipe? Here, I will show you how to make tasty lamb biryani. This recipe is so easy, you can make at any special occasion, family gatherings, or for a weeknight meal. Lamb biryani is also known as goat biryani or mutton biryani. Must try this recipe once and serve it to guests or family members with raita or anything you like and everyone is going to love it.

Before we move to the steps, let me tell you the tools/equipment and ingredients you will use.

Ingredients

To Tender Meat:

  • 1 Kg Lamb Meat (pieces with bones)
  • Water as required
  • Salt as per taste

To Boil Rice:

  • 1 Kg Rice (washed & soaked for 30-35 minutes)
  • 1 Tablespoon oil or as required
  • Salt as required
  • Water as required

To Make Lamb Gravy:

  • 1 Cup Oil
  • 1 Packet Ready-made Biryani Masala
  • 2-3 Medium Onions (chopped)
  • 1 cup Yogurt
  • 2 Tomatoes (finely chopped)
  • 5-6 Green Chilies (crushed)
  • 2 Tablespoons Ginger-garlic Paste
  • 2-3 Tablespoons Fresh Coriander (chopped)

For Assembling:

  • 1-2 Tablespoon Lemon Juice
  • ½ Teaspoon Yellow/Orange Food Color

Equipment

Make sure you have the following equipment before you start making lamb biryani:

  • Pressure Cooker
  • Large Cooking Pot
  • Heavy Bottom Pan
  • Kitchen Knife
  • Grater
  • Chopping Board
  • Measuring Spoons/Cups

Steps to make Lamb Biryani

To Tender Meat:

  1. In a pressure cooker, add lamb meat, salt per taste, water, close the pressure cooker and cook for 4 whistles (on high heat till the first whistle and on medium for next three) or for 30-40 minutes.
  2. After that, allow the pressure to subside completely.

To Boil Rice:

  1. In a heavy bottom pan; add water, oil, salt, and cook & cover until the water boils on high heat.
  2. Once the water starts boiling; add the soaked rice & stir it well.
  3. Continue to boil it on high heat, stirring few times gently to not break the rice.
  4. After around 9-10 minutes when the rice is almost done (90%) remove it from heat and strain the water. Set it aside.

To Make Lamb Gravy:

  1. In a cooking pot, add oil, onion, and fry until golden brown on medium heat.
  2. Next, add tender lamb meat, ginger-garlic paste, and fry until meat changes color.
  3. Add tomatoes, green chilies, chopped coriander, and mix well for 2-3 minutes.
  4. In a bowl, add yogurt, biryani masala, and mix well. Add the mixture to the gravy and cook until oil separates and sets aside.

For Assembling:

  1. In a separate pot; add half the boiled rice as the first layer and then spread the layer of lamb gravy on top of the rice uniformly. Spread the remaining boiled rice and lamb gravy.
  2. In water, add the food color and mix well. Drizzle over biryani.
  3. Drizzle lemon juice on the top, cover, and steam cook for 8-10 minutes (once you open the lid, mix the meat and rice evenly).

Your tasty lamb biryani is ready now. Garnish it with fried onion and coriander leaves if you want and serve it to guests or family members with raita & enjoy!
